The Ultimate Turkey Rack got its start when the inventor wanted to cook his bird upside down so that all the juices would baste into the breast of the turkey. But sitting upside down in a cooking pan would have the breast soak in the drippings and get soggy, and typical roasting racks would leave marks on the breast.
He wanted to be able to suspend the turkey while having an easy time to flip for that golden look, and so the Ultimate Turkey Rack was made. As I say, the design is extremely simple. You slide the skewer through the middle of the turkey, tie the legs on its rods with cooking twine, sit the contraption in a cooking pan and pop it in the oven. At about three quarters of the cooking time done, pull out of the oven and flip the turkey right side-up, then return into the oven to finish cooking.
